Double Chocolate Ice Cream

Chocolate ice cream is a delicious, crowd-pleasing dessert that’s impossible to give up on hot summer days.

Loved by young and old alike, chocolate ice cream really is simple to prepare at home with truly surprising results.

It’s made with egg yolks, milk, cream, a bar of good chocolate and cocoa powder (tastes even better with bean-to-bar dark chocolate).

Honey is added to the mix to make it soft & smooth, even after it has been placed in the freezer and which will allow for longer storage. But trust us, it won’t be around for long!

Chocolate ice cream is excellent served with biscuits or waffles, perhaps a homemade cone, and served with whipped cream on the side.

Double Chocolate Icecream

Serves: 10 portions /800g ice cream | Prep Time: 3 hours | Cook Time: 10 minutes | Ingredients: 7 | Difficulty: Medium


  • 250g Milk

  • 250g Cream

  • 90g Yolk

  • 125g Sugar

  • 20g Honey

  • 100g Dark chocolate

  • 20g Cocoa powder



  • Put the cream, milk and honey in a medium heavy-bottomed saucepan, and place it over medium-high heat. Cook, whisking occasionally to discourage the milk from scorching until the mixture comes to a full rolling boil remove the heat from the pot.

  • In a medium bowl, whisk the yolks with the sugar.

  • Add 1/2 cup of the hot dairy mixture to the yolks while whisking so the hot milk doesn’t scramble the yolks.

  • Pour the tempered yolks back into the pot over medium-low heat and cook, stirring and scraping the bottom of the pot constantly with a rubber spatula to avoid curdling.

  • When you notice the custard thickening or the temperature reaches 80°C on a kitchen thermometer, immediately take the pan and pour the milk mixture in the bowl with the chopped chocolate and cocoa powder three times and whisk it through.


  • Blend with a hand blender and pass through a sieve.

  • Cool down the ice cream and then transfer the ice cream base to the refrigerator to cure for 4 hours, or preferably overnight.

  • Place the base into the bowl of ice cream make and churn according to the manufacturer’s instructions.

  • The ice cream is ready when it thickens into the texture of soft-serve ice cream and holds its shape, typically 20 to 30 minutes.
